Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free BBQ Pork Carnitas.

I hope you are all having a fabulous Saturday.  We have just been along to our local country house that had an ancient craft fair on – you could learn how to cure things with salt, make soap and candles and also how to stain glass.  Of course I also made time for some lunch as they do excellent gluten and dairy free options. They were still serving brunch so I went for a bacon roll followed by a slice of amazing ginger cake.

Today’s recipe is for these beautiful BBQ pulled pork carnitas I made for dinner last week.  They are super easy to make as you can just stick the pork in a slow cooker and forget about it for the rest of the day.  The sauce is quick to make and you can serve it all with salad and dips in a tortilla wrap.

To make the pulled pork:

  1. Spread the garlic paste on the pork shoulder
  2. Mix together the sugar, paprika, chilli powder and season with salt and pepper
  3. Rub onto the pork shoulder
  4. Cook in the slow cooker low for 6-8 hours until the pork is tender enough to shred
  5. Remove any fat/rind and shred the pork using two forks

To make the BBQ Sauce:

  1. In a small saucepan add the vinegar, sugar, chilli powder, tomato puree and season to taste
  2. Bring to the boil and simmer for 2 minutes
  3. Stir through the pulled pork

To assemble:

  1. Load the tortilla wraps with pulled pork, salad, salsa, guacamole and mayo

  2. Any leftover pork can be frozen or used in another dinner
