Herby Potato Cakes (Gluten Free, Dairy Free)
Boil the potatoes for 15 minutes or until tender
Place the potatoes in a bowl and mash until smooth
Stir in the onion, seasoning, egg white, flour, oregano and chives
Shape into four cakes
Gently fry for a couple of minutes on each side until golden
I served mine with spinach, bacon and poached eggs
