Herby Potato Cakes (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 10 min Cook Time 25 min Total Time 35 mins Best Season: Fall

Ingredients

Instructions

  1. Boil the potatoes for 15 minutes or until tender

  2. Place the potatoes in a bowl and mash until smooth

  3. Stir in the onion, seasoning, egg white, flour, oregano and chives

  4. Shape into four cakes

  5. Gently fry for a couple of minutes on each side until golden

  6. I served mine with spinach, bacon and poached eggs
