I first had cinnamon toast on top of a gluten free and dairy free cupcake. It was a cinnamon cupcake with vanilla frosting and a lovely little square of cinnamon toast for decoration. I’m lucky enough to work near a fully gluten free bakery so I occasionally pop out for a little cake. I think cinnamon toast is more popular in America than over here but I’ve started making it as a treat breakfast for an alternative to French toast.
I made this and photographed it just before Christmas but I hated the photograph. I have the most beautiful Spanish ceramic plates and bowls but for some reason they never photograph well. I think the orange and yellow colours are too bold against the food on the plate. Never mind, I’ve rephotographed and typed up the recipe to share this morning.

Cinnamon Toast (Gluten Free, Dairy Free)
Preheat the oven to 180 oC
Mix together the dairy free spread, brown sugar and cinnamon
Spread on the bread and place on a baking sheet
Bake in the oven for 10 minutes
Serve with dusted with icing sugar and some fresh berries
