Welcome to my latest recipe for Gluten Free and Dairy Free Chocolate Peanut Butter Stuffed Pancakes.
Hope you are all staying stay and not suffering from cabin fever! I’m trying to stay busy focusing on the website and other little projects required around the house. I think Ollie cat is definitely wondering when this is going to end. He thought he had signed up for long stretches of peace and quiet while I was at working and doing whatever else I used to spend my time doing. Now he is subject to being petted all day and cheered while being held up at multiple video conferences a day – I think he has had enough.
Anyway today’s recipe is one of my favourites – the humble pancake. I made this treat breakfast last Sunday – my favourite pancake recipe jazzed up with a bit of cocoa powder and a surprise peanut butter centre. I added in the banana in the name of health and one of your five day!

Chocolate Peanut Butter Stuffed Pancakes (Gluten Free, Dairy Free)
Ingredients
Instructions

In a large bowl stir together the flour, cocoa powder and caster sugar

Beat the egg and stir into the flour mix

Gradually whisk in the milk until you have a smooth batter

Heat a drizzle of oil in a shallow pan over a medium heat

Add 2 tablespoons of the mix into the pan and cook for a couple of minutes

Drizzle some of the peanut butter into the middle of the batter and top with another tablespoon of pancake batter

Flip the pancake and cook for a couple of minutes

Repeat until you have cooked all the pancakes
