Hello everyone, my latest recipe is for Gluten and Dairy Free Sweet Chilli Sauce.  It is such a great basic to have in your store cupboard.  You can use it as a dipping sauce with your homemade dumplings or fish cakes.  It also makes a good addition to many Thai dishes.  I also like to use it to glaze salmon and roast it in the oven.

  1. Place the caster sugar and water into a small saucepan over a medium heat

  2. Over a medium heat, stir until the sugar is dissolved

  3. Bring to the boil for about 5 minutes until thickened

  4. In a small bowl, mix the garlic, ginger, cayenne pepper, chilli flakes, lime juice and soy sauce into a paste

  5. Add the paste into the sugar syrup and boil for another 1-2 minutes

  6. Remove from the heat and allow to cool
