Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Chilli Garlic Chicken.
It wasn’t the best of starts today – I’ve so far been stuck behind a broken train for an hour with no signs of moving anytime soon! The most frustrating bit is that I’m only about a mile away from my house but we are stuck in no man’s land between two small village stations and we can’t go forward or backwards. We are basically here until the engineers come and fix the train in front of us.
If you are missing a little treat from the Chinese takeaway (I’m lucky my local can accommodate coeliacs) then try out this recipe. Chicken and vegetables are coated in this chilli garlic sauce served on a bed of rice.

Chilli Garlic Chicken (Gluten Free, Dairy Free)
Description
Ready in under 30 minutes this quick recipe for Gluten Free and Dairy Free Chilli Garlic Chicken is perfect for week night dinner.
Ingredients
Instructions

Place the olive oil to a saucepan over a medium heat

Add in the chicken, onions, peppers, garlic, Chinese 5 spice and ground cinnamon

Sauté for 5 minutes

Whisk together the chicken stock, BBQ sauce, chilli sauce and soy sauce

Pour into the pan with the chicken and vegetables

Dissolve the cornflour in 2 tablespoons of water and pour into the pan

Bring to the boil and simmer for 15 minutes or until the sauce has thickened and the chicken cooked

Serve with rice and some extra chilli sauce
