Chicken tetrazzini is an American pasta dish – if you google it there are many stories about its origins so I’m not sure of its actual history. There are also many takes on it – some with chicken and some with seafood and a variety of different vegetables and toppings. This is my version of it which I’ve made suitable for us folks that can’t have gluten or dairy.
Rather than use spaghetti I went with fusilli pasta – I find gluten free spaghetti hard to cook and I imagined this dish becoming a stuck together mess so picked fusilli as a safer option. I also topped it with fresh parsley and some dairy free cheese – sometimes it has breadcrumbs but I decided to omit them as I didn’t have any gluten free ones to hand. So in conclusion it might not be traditional tetrazzini but it is easy to make and super tasty.

Chicken Tetrazzini (Gluten Free, Dairy Free)
Ingredients
Instructions

Place the dairy free spread in a large pan over a medium heat

Add in the mushrooms, onion, chicken and garlic

Saute for 5 minutes

Sprinkle in the flour and stir until the vegetables and chicken are coated

Add in the thyme, seasoning, chicken stock and dairy free cream
-
Stir frequently and cook for 8 minutes or until the sauce has thickened

Stir in the cooked pasta and pour into a casserole dish

Top with the remaining dairy free cheese
-
Grill for a couple of minutes until the cheese has melted
