Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Cheese Waffles with Avocado & Fried Egg.
This is my ideal breakfast – I love anything that is pancake or waffle based. When I’m down visiting friends in London we always got to the The Good Life Eatery for breakfast so I can get the gluten and dairy free waffles with mashed banana, berries and coconut yoghurt.
Today’s waffle is a take on eggs and avocado toast. I’ve made the waffle with a little dairy free cheese added in for extra flavour. You can adjust this recipe to suit your own taste – adding a poached egg for example or if you don’t have a waffle iron then use the batter to make pancakes.
If you are short of time in the morning then you prep the batter mix the night before and store it in the fridge.

Cheese Waffles with Avocado & Fried Egg (Gluten Free, Dairy Free)
For the waffles:
For the toppings:
Beat together the egg, dairy free spread and milk
Whisk in the flour, grated cheese and seasoning
Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
Alternatively you can use this mix to make savoury pancakes
Mash the avocado and stir in the lime juice, chilli and seasoning
Fry the eggs for a couple of minutes - I like mine crisp on the outside with a soft yolk
Serve the cheese waffles topped with the avocado and fried egg
