Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Singing Hinny.
When I was a little girl my Mum had one of those Bero cookbooks that everyone had and I was obsessed with making Singing Hinny just because the name always made me laugh, I had absolutely no idea what it was! Anyway we never did make it and for some strange reason it popped into my head the other day and I decided to look and see what it was.
Turns out it is similar to Welsh cakes and is a kind of scone type dough that is cooked on the hob. The reason it is called Singing Hinny is that it kind of makes a sizzling noise when cooking, hence the singing!
What first turned out just a novelty named recipe is actually very tasty, I enjoyed it with a fresh fruit salad for breakfast.

Singing Hinny (Gluten Free, Dairy Free)
Ingredients
Instructions

Place the flour, salt, sugar and baking powder into a large bowl

Rub in the dairy free spread until it resembles breadcrumbs

Stir in the sultanas

Mix together the milk and lemon juice

Stir into the flour mix until it forms a soft dough

Roll out into a circle about a couple of centimetres thick

Slice into quarters

Heat a frying pan over a medium to hot heat
-
Cook the singing hinnys for a few minutes on each side until they start to brown slightly

Serve immediately with dairy free spread, jam or honey
