Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Roasted Cashew Nut & Honey Puffed Granola.
I’m away from a long weekend with friends in Dublin – there is plenty of gluten and dairy free choices so that is keeping me happy! Had an amazing meal at the hotel last night with friends and I’ve just finished a lovely breakfast of gluten free bread with eggs, chorizo and avocado and of course a giant soya milk cappuccino.
I had a big bag of gluten free honey puffed rice I got in Holland and Barrett’s penny sale and was sick of it as a breakfast cereal on its own so I used it as a base for this granola.
I was trying to be arty with the photograph of it spilling out the jar – unfortunately the reality of the situation was the it went everywhere. Poor Ollie cat who was minding his own business having his breakfast in the corner of the kitchen was unceremoniously showered in gluten free granola.
Despite the mess I was pretty happy with the granola, I hope you like the recipe too.

Roasted Cashew Nut & Honey Puffed Granola (Gluten Free, Dairy Free)
Pre-heat the oven to 150 oC
Heat the sugar, cinnamon, oil and honey or maple syrup in a small saucepan for about 3-5 minutes
Place the oats and cashew nuts in a large bowl and pour over the mix from the saucepan
Stir well until oats are coated in the sugar mix
Spread out the oats on a large baking sheet covered by parchment paper and place in the oven for 15 minutes
Remove from the oven and stir the oats, return to the oven for another 10 minutes
Remove the granola from the oven and allow to cool, it will harden during cooling
Stir in the honey puffed rice and store in airtight container
