Hello everyone, welcome to my fun new recipe for Gluten and Dairy Free Strawberry Milkshake Cupcakes. I made these cupcakes for the family on Easter Sunday which was also my mum’s birthday. She isn’t a big fan of chocolate cake so I decided to go with something fruity instead. I’ve used real strawberry puree to flavour (and colour) the frosting and paper straws to decorate.
I’ve had this cupcake idea in the back of my notepad for about two years and it feels good to finally get it published. There are a few other good ideas in there I need to take the time to turn into proper recipes.

Strawberry Milkshake Cupcakes (Gluten & Dairy Free)
Ingredients
For the cupcakes:
For the frosting:
Instructions

Preheat the oven to 180 oC

Line a muffin tin with 6 paper cases

Beat together the dairy free spread and caster sugar

Whisk in the eggs one at a time

Gently fold in the gluten free flour

Add a tablespoon of the cake batter to each muffin case then add a drop of strawberry jam and top with the remaining cake mixture

Bake in the oven for 22 minutes

Remove from the oven and allow to cool completely

Make the frosting by beating together the icing sugar and dairy free spread until light and fluffy

Puree the strawberries in a blender and add 1-2 tablespoons into the frosting

Pipe onto the cupcakes

Cut a paper straw into six and push into each cupcake for decoration
