Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Peach Melba Loaf Cake.
I find baking a good relaxing activity so want to do a bit more while I’m stuck in the house. As ingredients aren’t as easy to come across at the moment I’m trying to stick to simple recipes. Also plainer cakes like this without icing and frosting are great to portion up and store in the freezer.
If you are finding it tricky to get fresh raspberries and peaches then you can substitute with canned peaches and frozen raspberries. Both of which I had in my freezer/store cupboard already and inspired the peach melba flavour of this cake.

Peach Melba Cake (Gluten & Dairy Free)
Ingredients
For the cake:
Instructions

Preheat the oven to 180 oC

Whisk together the dairy free yoghurt, caster sugar, eggs and vegetable oil

Stir in the gluten free flour, peaches and raspberries

Spoon into a greased and lined 8" square tin

Bake for 55 minutes

Remove from the tin and allow to cool completely

I dusted mine with some icing sugar before serving
