Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Gingerbread Pancakes.

My regular followers will know how much I love my pancakes for breakfast – they are the ultimate treat for me.  The other morning I decided to try and make some gingerbread flavoured pancakes.  I used my basic pancake recipe but sweetened them with treacle, ginger and cinnamon to get that gingerbread taste.

Obviously the best thing about these pancakes is eating them but a close follow up is the amazing smell while they are cooking.  The smell of the warm spices is definitely a great way to start the day.

Gingerbread Pancakes (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 10 mins Cook Time 5 mins Total Time 15 mins
Servings: 2
Best Season: Fall



  1. In a large bowl stir together the flour, ginger and cinnamon
  2. Beat the egg and stir into the flour mix
  3. Stir in the treacle
  4. Gradually whisk in the milk until you have a smooth batter
  5. Heat a drizzle of oil in a shallow pan over a medium heat
  6. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  7. Repeat until you have cooked all the pancakes
