We’ve had two extremes the last couple of days with weather. Last night I sat in the sun enjoying a big bowl of paella and starting a painting project. The night before that it was the worst rain and thunder and lightening all night. Ollie cat was sure to smack my face with his paw every time the thunder struck – this went on most of the night. It’s not looking a great outlook for the weekend though – fingers crossed it will be dry some of the time.
Tonight’s recipe is for this simple little baking idea. For a change to chocolate chip muffins I decided to make a choc chip muffin loaf. Everyone seemed happy with it and it worked well as is or with jam, peanut butter or dairy free chocolate spread.

Choc Chip Muffin Loaf (Gluten & Dairy Free)
Preheat the oven to 180 oC
Grease and line a 900g loaf tin
Beat together the eggs, dairy free milk and natural yoghurt
Stir in the cinnamon, caster sugar, flour and chocolate chips
Spoon into the loaf tin
Bake for 55 minutes
Remove from the loaf tin and allow to cool before serving
