Meal Prep Chicken Burrito Box (Gluten & Dairy Free)
Cook the rice according to the instructions on the packet and split between the two tubs
Season the chicken with salt and pepper and sprinkle on 1 teaspoon of fajita seasoning
Heat some olive oil in a shallow pan and cook the chicken for about 7 minutes on each side
Add some olive oil, diced onion, peppers and the remaining teaspoon of fajita seasoning to a pan and sauté for about 5 minutes
Divide the chicken and vegetables between the two tubs
Finish your lunch boxes by packing some tomatoes, avocado and a small fruit salad of pineapple and raspberries
