Chilli Sweet Potato and Quinoa Soup (Gluten Free, Dairy Free)

Place the olive oil in a large saucepan over a medium heat

Add the garlic, onion and chilli

Saute for 5 minutes

Stir in the sweet potatoes, stock, lentils and quinoa

Bring to the boil and simmer for 25 minutes
