Salted Peanut Chocolate Cookies (Gluten Free, Dairy Free)

Beat together the dairy free spread and caster sugar until light and fluffy

Beat in the egg

Stir in the flour, cocoa powder baking powder and peanuts

Chill in the fridge for 30 minutes

Preheat the oven to 200 oC

Line two baking sheets with parchment paper

Place tablespoons of the mixture on the parchment paper and flatten into discs

Cook for 10 minutes

Allow to cool on the baking sheet for 10 minutes before transferring to a cooling rack
