Welcome to my latest recipe for Gluten and Dairy Free Butternut Squash and Granny Smith Apple Soup.

Today’s recipe is actually one my friend gave me – he always has good soup recipes.  I wanted to try it out on my family and see if it is a goer for the starter at Christmas dinner.  I know it is far too early to be thinking about that but I come from a very organised family!

The flavours in this soup are beautiful, you can really taste the apple.  A lot of time when you buy something with a  flavour added in you can’t actually taste it.  I had a tomato soup with orange from a cafe the other day and I couldn’t taste the orange at all.

A beautiful autumnal soup with sweet butternut squash and crisp apples

Ingredients

Instructions

  1. Place the olive oil in a large saucepan over a medium heat
  2. Add in the onion, garlic, paprika and chilli flakes
  3. Sauté for 5 minutes
  4. Add in the butternut squash, sweet potato, apple, apple juice and stock
  5. Bring to the boil and simmer for 20 minutes
  6. Blend until smooth and season with salt and pepper
