Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Mini Cheese Crackers.
I had a day off work yesterday for the first time in ages and enjoyed a chilled out day with a bit of shopping and meeting a friend for dinner. Unfortunately I did have to fit in a hospital appointment though – that’s the joy of having a condition like Ehlers Danlos Syndrome. I go through times when I’m fairly in control of my condition and I don’t have a lot of hospital appointments and then there are times when I feel like I’m never away from the place. This week I’m back at the hospital, this time at Vascular Surgery, to see what can be done about the damage a massive blood clot did to the main vein in my left leg – fingers crossed they can do something to help.
Enough of my moaning and back to today’s recipe share for these mini gluten and dairy free cheese crackers. I served these with my tomato chutney as a little side dip.

Mini Cheese Crackers (Gluten Free, Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC

Line a baking sheet with parchment paper

Place the gluten free flour and seasoning in a bowl

Rub in the dairy free spread and stir in the grated cheese and water
-
Gather together into a ball and wrap in clingfilm
-
Place in the freezer for 10 minutes
-
Roll out on a lightly floured surface to about 3mm thick

Cut small circles from the dough
-
Prick the top of the crackers with a fork
-
Place on the baking sheet
-
Bake for 15 minutes

Allow to cool on the baking sheet
