Instructions

Heat the olive oil in a large shallow pan over a medium heat

Add in the onion, garlic, ginger and chilli

Saute for 10 minutes

Add in the cumin, turmeric and garam masala

Stir in the lentils

Pour in the coconut milk and water

Bring to the boil and simmer for 15 minutes

Turn up the heat and reduce the sauce until thick and creamy

Stir in the spinach and coriander leaf

Season to taste with salt and pepper
