Help everyone, welcome to my latest breakfast recipe for Gluten Free and Vegan Banana Pancakes.

Pancakes are still one of my favourite breakfasts. I like to spend a Sunday morning enjoying a big plate of pancakes while I type up my recipes for the coming week.

I have a tonne of pancakes recipes on my website already from red velvet to peanut butter and jelly.  This time I decided to focus on a gluten and dairy free recipe that was also egg free but tasted lovely and fluffy.

  1. Stir together the mashed banana, lemon juice, cinnamon and olive oil
  2. Add in the flour and then whisk in the milk
  3. Heat a large shallow pan with a drizzle of oil over a medium heat
  4. Make six pancakes from the batter and cook for a couple of minutes on each side
  5. Serve topped with the maple syrup
