Hope you are all continuing to stay safe.  I’ve going out a walk most nights after working from home – it really clears my head and is nice to get some fresh air before bedtime.  When wandering around I’ve seen the most beautiful sunsets and views over the water but never remembered to bring my camera.

Anyway, back to today’s recipe and it is for one of my favourites – pasta!  I could literally eat pasta everyday of the week and luckily I have been able to get it again in the deliveries from my local Tesco.  I’ve made a light creamy (dairy free) sauce with fresh tomatoes and topped it with a beautiful piece of salmon and a small rocket salad.  This dish can be ready in 20 minutes making it perfect after a busy work day.

Tomato Salmon Pasta (Gluten Free, Dairy Free)

Try out my latest pasta recipe for Gluten Free and Dairy Free Tomato Salmon Pasta. A creamy pasta sauce topped with pan roasted salmon

Ingredients

Instructions

  1. Cook the pasta per the instruction on the packet and set aside
  2. Heat a tablespoon of olive oil in a shallow pan
  3. Sear the salmon for 5 minutes on each side
  4. Remove the skin from the salmon and flake into chinks, set aside while you make the sauce
  5. Add olive oil to a saucepan over a medium heat
  6. Sauté the garlic and onion for 5 minutes
  7. Add in the sun dried tomatoes, paprika, chilli flakes and basil
  8. Pour over the cream and simmer for 5 minutes
  9. Add in the spinach and cook for a minute or until wilted
  10. Season to taste
  11. Stir in the flaked salmon and cooked pasta
  12. Serve immediately
