Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Leftover Mincemeat Pancakes. It is that funny time of the year between Christmas and New Year when I have absolutely no idea what day it is. I have a clinic appointment on Wednesday and have had to set a reminder on my phone so I actually turn up to it! I’ve spent today reliving my childhood and playing with Eva’s toys.
For the final recipe of the year I’ve decided to share a quick and easy idea to use up that little bit of Christmas mincemeat that always seems to be leftover. These pancakes take perfect served with slices of fresh orange and a big mug of coffee.

Leftover Mincemeat Pancakes (Gluten Free, Dairy Free)

Looking for a fun breakfast for Boxing Day? Try out my delicious recipe for Gluten and Dairy Free Leftover Mincemeat Pancakes.
Ingredients

In a large bowl stir together the flour and caster sugar. Beat the egg and stir into the flour mix.

Gradually whisk in the milk until you have a smooth batter and stir in the Christmas mincemeat.

Heat a drizzle of oil in a shallow pan over a medium heat. Add a quarter of the mix into the pan and cook for a couple of minutes on each side.

Repeat until you have cooked all the pancakes. Top with some dairy free spread and dust with icing sugar.
