Trying to make the best out of a bad situation – one of the benefits of lockdown for me has been having more time to make dinner. I’ve used the time I would normally spend commuting home after work to develop some new tasty dinner recipes.
I’ve been spending my spare lockdown time making sure I get ahead with new recipes for the website. If this continues much longer I’ll have enough recipes for the rest of the year by the time I get back to the office!
Today’s recipe is for a beautiful oven baked salmon with a simple sauce made from fresh coriander and coconut milk. I’ve paired it simple side of brown rice for an light but flavoursome meal.

Coriander and Coconut Salmon (Gluten Free, Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC

Place the salmon steaks in a casserole dish

Put the fish sauce, ginger, coconut milk, garlic, coriander, brown sugar, lime juice and seasoning in a blender

Blitz until smooth

Pour over the salmon and bake in the oven for 15 minutes or until your salmon is cooked

Serve with your cooked rice
