Hello everyone, I thought a would share a different seasonal recipe today for Christmas Granola. For those of you that follow the site regularly you will know I love making my own granola and frequently post different granola recipes. This weekend I decided to give my usual gluten free granola a bit of a Christmassy spin and incorporate some seasonal flavours into it – cranberries, oranges and cinnamon. A perfect start to the wintery mornings.

Christmas Granola (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 10 min Cook Time 30 min Total Time 40 mins Servings: 10 Best Season: Winter

  1. Preheat the oven to 150 oC

  2. Line 2 baking sheets with parchment paper

  3. Place the orange juice, sugar, maple syrup, cashew nut butter and orange zest into a saucepan

  4. Bring to the boil and simmer for 5 minutes, whisking until well combined

  5. Stir in the coconut oil and remove from the heat

  6. Place the oats, coconut, almonds, cinnamon, ginger, nutmeg and cloves in a large bowl

  7. Stir in the liquid from the saucepan

  8. Spread out evenly across two baking sheets

  9. Bake for 30 minutes, stirring the granola after 10 minutes and 20 minutes to allow even baking

  10. Remove from the oven and allow to cool completely

  11. Stir in the cranberries

  12. Store in an airtight container
