Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Blueberry Muffin Porridge.

Hope you all had a wonderful Christmas.  We had a lovely time and it was even more exciting this year as it was my niece’s first Christmas.  I do feel like I’ve eaten about a week’s worth of food in the last three days though.

Today is the day that all the visitors head home and the house returns to normality.  I though I would spend a bit of today planning some future posts for the website.  I’ll share a couple of new recipes this week and then I think I’ll round of the year with a look back at some of my favourite recipes of 2017.

As a little nod to something remotely healthy after the Christmas indulgence I decided to make some porridge for breakfast.  Porridge is something we all have a different view on in my family.  My parents are firm believers that porridge is porridge – only a pinch of salt should be added.  I love it but only with lots of things added and my sister hates it in any form!

Today’s porridge was inspired by blueberry muffins – I added a handful of blueberries to the porridge in the last minute of cooking so they are soft and juicy.  I’ve topped this bowl with a little brown sugar which melts into a lovely caramel, some cinnamon, more blueberries and some walnuts for crunch.

Inspired by this recipe, my new creativity journal and with some time on my hands rather than the normal chaos of my life, I’ve written down a list of porridge flavours I want to try next year – so look for them appearing on my website.

  1. Mix the oats, milk or water and honey in a small saucepan
  2. Bring to the boil and simmer for 4-5 minutes
  3. Stir in the blueberries and cook for another minutes
  4. Top with the brown sugar, cinnamon, blueberries and walnuts
  5. Serve immediately
