Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Strawberry Shortcake.
I know I say this all the time but strawberry shortcake has been on my list of things to make for ages. The theme of lockdown for me has definitely been photographing all those must make recipes and ticking them off my to do list.
It is pretty easy to make as you can prep the shortcake biscuits ahead of time and assemble the strawberries and cream just before you serve. You can purchase the dairy free cream online – I’ve posted the details at the bottom of the recipe.
If you only want to make a couple of strawberry shortcakes you can make the dough, stamp out the shortcake biscuits and place the rest of the dough in the freezer. The remaining dough can be used to make plain shortcake biscuits or you can sandwich them together with jam or your favourite flavour of frosting.

Strawberry Shortcake (Gluten & Dairy Free)
Ingredients
For the base:

Instructions

Whisk together the dairy free spread and icing sugar until light and fluffy

Whisk in the egg

Stir in the gluten free flour

Wrap in cling film and chill in the fridge for an hour

Preheat the oven to 180 oC

Roll out the dough to 5mm

Using a cookie cutter cut out twelve circles and place on a parchment lined baking sheet

Bake in the oven for 15 minutes

Let the cookies cool completely

Beat together the icing sugar and dairy free whipping cream
-
Sandwich the biscuits together with the whipped cream and strawberries

*SoyaToo make a carton of whipping cream you can chose from rice, soya or coconut. You can purchase this online or at your local health store.
