Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Stem Ginger Cookies.
I’m feeling a bit sorry for myself this weekend as I have a stress fracture in my left foot. I’m back in my AirCast walker boot and have decided to have a peaceful weekend. I was supposed to be visiting friends in London but for once have been sensible and decided to take a couple of days off my feet to try and see if it kicks off the healing process.
I’ve been doing some Autumn themed baking in the last few weeks as the weather changes. For me this means comforting bakes packed full of warming spices. Next week I’ll be sharing a new carrot cake recipe and I also have a pistachio shortbread appearing soon. These cookies are packed full of beautiful stem ginger and are simple to make if you are short on time.
