Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Prawn, Tomato & Lime Risotto.

I’m back at Cardiology this morning – one of the symptoms of my Ehlers Danlos Syndrome is extremely low blood pressure.  I’m talking ‘the blood pressure machine can’t be working’ low!  I’ve been taking medication for about 6 months that has really helped and brought it up to the very bottom of normal.  It does make me laugh though when I go to a pharmacy to pick up the tablets they never have it in stock.  I think we are more of a country of high blood pressure rather than low!

Today’s recipe is definitely one born out of random things I have in the fridge but work really well when combined.  Risotto is a meal I often make to use up bits and pieces I have left over from the week rather than a meal I plan to have.  This one has beautiful prawns, sweet cherry tomatoes and a squeeze of lime juice for some added zest.

Prawn, Tomato & Lime Risotto (Gluten Free, Dairy Free)

Difficulty: Intermediate Prep Time 5 min Cook Time 30 min Total Time 35 mins Best Season: Spring



  1. In a large pan heat some olive oil over a medium heat

  2. Add the onion, garlic, chilli flakes and basil

  3. Cook for 5 minutes

  4. Stir in the rice

  5. Add in the white wine (if using) and cook until absorbed

  6. Add the stock one ladle at a time waiting for the liquid to be fully absorbed before adding the next ladle. Note this process can take about 30 minutes

  7. Stir in the prawns, lime juice, zest, tomatoes, dairy free cream cheese and season with salt and pepper

  8. Cook for a couple of minutes untilt he prawns are done and the tomatoes tender
