Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Coconut Prawns.
I’ve had this recipe for ages but decided to keep it until Christmas time as I thought it would be a perfect recipe for party food. This year I’m having a buffet lunch and quiz on Christmas Eve so I’ll be looking for easy little recipes like this.
As there is so much to do at Christmas and there is a bigger choice in the shops now I think my buffet will be a nice balance of homemade and shop bought treats.
These prawns are dipped in gluten free breadcrumbs with coconut and shallow fried for a lovely crispy coating. I recommend serving these prawns with a little sweet chilli dipping sauce.

Coconut Prawns (Gluten & Dairy Free)
Crispy prawns in a coconut breadcrumb coating with sweet chilli dipping sauce
In one bowl mix together the flour, garlic powder and salt
In another bowl have the beaten egg
In the final bowl mix together the desiccated coconut and breadcrumbs
Dip each prawn in the flour then the egg and finally the breadcrumbs
Pour oil into a shallow pan until it covers the bottom
Place on a medium heat for a couple of minutes
Add the prawns and cook for 2-3 minutes each side or until golden
Serve with a sweet chilli dipping sauce
