Tonight’s recipe is a family favourite – Apple and Rhubarb Crumble! I couldn’t decide whether to go for apple and rhubarb so in typical me fashion I went for both. I always associate crumble with Brora in the North of Scotland – when we were little we used to go there in our caravan for summer holidays. The golf club always served the best crumble ever in the humble opinion of my Dad and I who are both dessert (and anything sweet actually) aficionados.
So if you are on a restricted diet and craving crumble then this recipe is for you.

Apple and Rhubarb Crumble (Gluten Free, Dairy Free)
Ingredients
For the base:
For the crumble topping:
Instructions

Place the apples, rhubarb, caster sugar and lemon juice in a large pan

Cook over a medium heat until the apples and rhubarb are tender, about 20 minutes

Pour into a 2 litre casserole dish

Preheat the oven to 180 oC

Place the flour, caster sugar and ground cinnamon in a bowl and stir together

Rub in the dairy free spread until it resembles breadcrumbs

Pour over the fruit

Bake in the oven for 30 minutes or until golden brown
