Hello everyone, I made this beautiful Gluten and Dairy Free Red Velvet Cake last week for my parents. It was a thank you for them taking me to my latest hospital tests and rather selfishly something nice for me to eat when I got out! I don’t like to add too much red colouring as I still like it to look natural. You can also add more in if you want a more vibrant colour.
As I’ve talked about before, I’m currently completely rebuilding the website. It is pretty time consuming but hopefully the results will be worth it. Thanks to everyone that has been answering my questions on social media about the features that matter to you. Interestingly enough the answers vary depending on the platform. Hundreds of you answer on instagram that they wanted one baking section. On twitter and facebook only a few people answered but wanted a separate baking and dessert section. Not sure what that tells me …

Red Velvet Cake (Gluten & Dairy Free)
Ingredients
For the cake:
For the frosting:
Instructions

Preheat the oven to 180 oC

Greas and line two 8" round cake tins

Stir together the lemon juice and dairy free milk and set aside

Cream together the dairy free spread and caster sugar until light and fluffy

Beat in the eggs one at a time

Stir in the red food gel, cocoa powder and gluten free self raising flour

Mix in the milk mixture

Divide between the two cake tins and bake for 35 minutes

Remove from the oven and allow to cool completely

Make the frosting by whisk together the dairy free cream cheese, dairy free spread, vanilla extract and icing sugar until light and fluffy

Use half the frosting to sandwich together the cakes and the rest for the top
