Hello everyone, welcome to my latest recipe for this delicious Gluten and Dairy Free Creamy Chicken Soup.
I’m feeling a bit sorry for myself this evening as I’m having problems with my elbow. A few years ago I had an accident and its never been the same since. I fell about 5 minutes after arriving in Aberdeen for a weekend away resulting in an open dislocation – think a big hole and lots of blood. In the last week its started to ache, swell up, bruise and lock when I try to straighten it – I’m thinking a trip to the hospital is on the cards.
Its really cold and windy here today and I wish I was coming home from work to a bowl of this creamy chicken soup. UnfortunatelyI’ll have to wait until I make my sausage and broccoli pasta dish. This is the perfect soup if you like a hearty filling bowl as its packed full of chicken rice and vegetables.

Creamy Chicken Soup (Gluten & Dairy Free)
Add the olive oil to a large pan over a medium heat
Stir in the garlic, onion, mushrooms, carrots and chicken
Sauté for 5 minutes
Pour in the chicken stock, milk, thyme and seasoning
Bring to the boil and add in the rice
Simmer until the chicken is cooked and the rice is tender about 12-15 minutes
