Hello everyone, I’ve been baking some Gluten and Dairy Free Chocolate Chip Oatmeal Cookies. A few weeks ago it was one of my friend’s birthday and we decided to celebrate with a virtual cookie bake. How times have changed in this last year!
I’ve based these on my raisin oatmeal cookies but decided to make a chocolate chip version instead. These cookies are really quick and easy to make as the dough doesn’t need to be chilled before you bake them. If you can’t find dairy free chocolate chips just chop up a small dairy free chocolate bar instead.
As with most home baking these cookies are best eaten within a couple of days. I like to pop these cookies in the microwave for 20 seconds so they are a bit warm and the chocolate a little gooey.

Chocolate Chip Oatmeal Cookies (Gluten & Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC

Beat together the dairy free spread and caster sugar until light and creamy

Beat in the egg
-
Stir in the gluten free flour, cinnamon, gluten free oats and dairy free chocolate chips

Line two baking sheets with parchment paper

Place teaspoons of the mix onto the baking sheet and flatten into thick cookies

Bake for 10 minutes

Allow to cool for a couple of minutes before removing from the cookie sheet
