Chicken Jalfrezi (Gluten Free, Dairy Free)

Heat the oil in a large pan over a medium heat

Add the onions, peppers and garlic and saute for 2 minutes

Add the chicken, turmeric, chilli and seasoning

Cook for 5 minutes

Add the tomatoes, cover with a lid and cook for 20 minutes

Uncover and cook for another 5-10 minutes until thickened

Stir in the melted dairy free spread, cumin seeds, coriander leaf, garam masala and ginger

Cook for another 5 minutes

Serve with pilau rice
