Preheat the oven to 180 oC

Line a muffin tin with paper cases

Mix together the apple, carrot, cinnamon, poppy seeds, sugar, oil and eggs

Stir in the flour and mix until well combined

Divide between 6 muffins cases

Bake in the oven for 25 minutes
