Hello everyone, I must admit these Gluten and Dairy Free Banana and Peanut Butter Cookies is an old recipe I have rephotographed. I know it is a bit cheeky but I thought I would share it again now it has a new look – hopefully for the better. I made these cookies for my parents and put them in a pretty glass cookie jar. Much to my amusement my Dad couldn’t fit his hand into the new jar and had to wait to be issued a cookie! On a side note – although I’m pretty tall I do have tiny hands and wrists so it was probably a ridiculous jar to put the cookies in.
My baking project this weekend was a gluten and dairy free tiramisu. This is a recipe that so far had alluded me but I’m proud to report I have one that finally works. I’ll get the recipe written up and shared hopefully in time for next week’s blog posts. Using the learnings from this recipe I’m now hoping to create a strawberry trifle as my next baking project. Banana and Peanut Butter Cookies (Gluten & Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC

Beat together the mashed banana, peanut butter, brown sugar and caster sugar

Stir in the cinnamon, flour, baking powder and chocolate chips

Shape the dough into a log and cut into 15 cookies
-
Place the cookies on a parchment lined baking sheet

Bake in the oven for 12 minutes

Allow to cool before enjoying
