Hello everyone, try out my latest recipe for Gluten and Dairy Free Lemon Curd.
Nothing beats a good jar of homemade lemon curd. This is a simple recipe with only four ingredients and it only takes about 20 minutes to make.
You can use this recipe is a few of your baking projects. It works great on some gluten free scones or as an alternative to the strawberry jam in a Victoria sandwich cake.

Lemon Curd (Gluten & Dairy Free)

Place a half filled pan of water on a medium heat and bring to the boil. Turn down the heat until the water is simmering.

In a large bowl beat together the eggs. Stir in the dairy free spread, caster sugar, lemon juice and zest.

Place the bowl over the saucepan of simmering water but don’t let the bottom of the bowl touch the water. Stir the mixture until it thickens.

Remove from the heat and place in a large sterilised jar. Once cooled keep refrigerated.
