Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Fish Burrito Bowls.
I’m on holiday from work this week and while I love my job it is nice to have some time to get caught up on bits and pieces. So far I’ve had a nice mix of a friend staying for a couple of days and a few days at my parents. It’s also a great opportunity for me to try and do some planning and get ahead with the website for the next few weeks. Although I’m not quite sure how successful I’ve been at as I’m typing the recipe up for this fish burrito bowl the same day it is scheduled to be posted!
This recipe is definitely going to become a staple in my house. I’m not that creative when it comes to using fish in recipes and often just stick to plain old fish and chips. I’ve used cod fillets in this recipe and coated them in fajita spices before pan frying them so they are lovely and crisp on the outside. Served on a bed of rice, peppers and onions with salad leaves, dairy free cheese, tomatoes and crushed avocado.

Fish Burrito Bowls (Gluten Free, Dairy Free)
Ingredients
Instructions

Cook the rice according to the instructions on the packet

Divide between the two bowls and add in a handful of salad leaves

Sauté the onion and peppers with one teaspoon of the fajita seasoning for 5 minutes in a shallow pan over a medium heat

Divide between the two bowls

Coat the fish in the remaining fajita seasoning and gently fry for 3 minutes on each side

Cut into chunks and divide between the two bowls
-
Top the bowls with the cherry tomatoes, avocado and dairy free cheese
