Spanish Chicken Stew (Gluten Free, Dairy Free)

Heat a drizzle of olive oil in a shallow pan

Cook the chicken and chorizo for 5 minutes

Stir in the onion, pepper, garlic, chilli and paprika

Cook for 5 minutes

Stir in the stock, tomato puree and passata

Bring to the boil and simmer for 15 minutes

Season with salt and pepper and stir in the basil

Serve with rice
