For the bun dough:

Instructions
To make the bun dough combine all the ingredients, except the peel and sultanas, in a large bowl and beat for 5 minutes with an electric paddle mixer or hand knead on a well floured surface
Mix in the peel and sultanas
Divide into six and shape into buns
Place on a baking sheet lined with parchment and place in a warm, draft free area for 20 minutes
Preheat the oven to 200oC
Mix the gluten free flour and water together until it forms a smooth paste
Place in a small icing bag and pipe a cross on each bun
Place in the middle of the oven for 20 minutes
Remove from the oven and glaze immediately with the orange marmalade
