Welcome to my latest recipe for Gluten Free and Dairy Free Cashew and Sultana Granola.
It’s a busy week for me – I go into hospital to have my elbow operation on Wednesday. It has to be my right hand of course so I may not post as many recipes as I usually do. I have a few new recipes photographed and ready to share though so there will be posts.
Last weekend I put together this cashew nut and sultana granola. It doesn’t take long to make and you can store it in an airtight container to enjoy over the next few weeks.

Cashew and Sultana Granola (Gluten Free, Dairy Free)
Preheat the oven to 160 oC
Place the coconut oil, honey and brown sugar in a saucepan
Heat gently until melted and well combined
Place the oats and cashew nuts in a large bowl
Pour over the coconut oil mixture and stir until all the oats are well coated
Spread out across a couple of lined baking sheets
Bake for 30 minutes, stirring the oats halfway through cooking
Allow to cool then stir through the sultanas
Store in an airtight container
