Morning everyone, welcome to m latest recipe for Gluten Free and Dairy Free Strawberry Choc Chip Mini Pancake Muffins.
Hope you are all having a great week – mine has been supper busy as always. I’m enjoying the sunshine and got my fingers crossed that it lasts into the weekend and I can maybe have a BBQ.
This morning’s recipe is for these cute little pancake muffins – or maybe I should call them puffins!
I’ve used my basic pancake mix and jazzed it up with some strawberries and dark chocolate chips. I’ve then poured it into these mini muffin moulds to create lovely little bite sized pancake muffins. A perfect treat for breakfast.

Strawberry Choc Chip Mini Pancake Muffins (Gluten Free, Dairy Free)
A twist on my traditional pancake recipe
Preheat the oven to 180 oC
Grease a mini muffin or pie tin
Whisk together the flour, sugar, egg and milk until you have a smooth batter
Spoon into the mini muffin tin so each cup is 3/4 full of mixture
Top with the chocolate chips and strawberries
Bake in the oven for 10-12 minutes
Serve dusted with icing sugar or drizzled in maple syrup
