Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Mediterranean Macaroni Cheese.

A little twist on the classic macaroni cheese, I took my gluten and dairy free macaroni cheese and added in some Italian herbs and sundried tomatoes. Not really a new recipe but I thought it was worth sharing with you guys.

Mediterranean Macaroni Cheese (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 10 min Cook Time 30 min Total Time 40 mins Servings: 2 Best Season: Winter



  1. Preheat the oven to 180 oC

  2. Place the pasta in a pan of salted boiling water and cook per the instructions on the packet

  3. Melt the butter in a medium sized saucepan over a medium heat

  4. Stir in the flour and onion powder until it forms a smooth paste

  5. Gradually pour in the milk and stir continually until the sauce comes to the boil

  6. Simmer until the sauce thickens, about 2 minutes

  7. Stir in 2/3 of the cheese, the herbs and the sundried tomatoes

  8. Season with salt and pepper

  9. Stir through the pasta

  10. Pour in a casserole dish and top with the remaining cheese

  11. Bake in the oven until golden and bubbling, about 10-15 minutes
