Welcome to my latest recipe for Gluten Free and Dairy Free Maple Baked Apples.

Last week was another busy week so I was lucky to take Friday afternoon off and just chill out with my sister and niece.  It was such a beautiful day so we wandered along the coast for a bit and then enjoyed some takeaway coffee.  Of course I can’t have coffee with out cake and I’m lucky our local cafe always has at least one gluten and dairy free cake – this week it was carrot cake.

As work is so busy just now I’m making sure I put aside a little of the weekend to make sure the website is up to date for the week ahead.  These maple baked apples taste delicious but fall into the category of recipes that don’t look that great photographed.  I like to have this recipe for my breakfast – they don’t take long to prep and you can pop them into the oven while you get ready for the day ahead.

Instructions

  1. Preheat the oven to 180 oC
  2. Mix together the maple syrup and ground cinnamon
  3. Place the apples skin side down in a casserole dish
  4. Drizzle with the maple syrup mix
  5. Bake in the oven for 35 minutes or until the apples are soft

  6. Spoon the yoghurt onto two plates and top with the baked apples and sprinkle on the cashew nuts
