Hello everyone, my latest recipe is for Garlic Pancetta Pasta (Gluten Free & Dairy Free).
I am such a carb lover – I think people sometimes assume that because I’m coeliac I don’t eat a lot of them. Unfortunately for my waistline that isn’t the case and I’ve made sure to find good gluten free carb alternatives! It took me years to find gluten free bread and rolls I was happy with.
I usually have a pasta dish most weeks – they are always really easy to put together after a long day at work. Today’s pasta dish is based on carbonara but the sauce is a little lighter. It is packed full of flavour from the garlic, pancetta and dairy free cheese. It is so tasty I could have eaten a tonne of this in one sitting.

Garlic Pancetta Pasta (Gluten Free, Dairy Free)

Ingredients
Instructions

Cook the pasta per the instructions on the packet

Place the pancetta, onion and garlic in a shallow pan over a medium heat

Saute for 5 minutes or until golden

Pour in the chicken stock and simmer for 5 minutes

Whisk the egss, parsley and cheese together

Add the cooked pasta and egg mix into the pan and stir until well combined

Cook for a couple of minutes

Serve with some extra parsley and dairy free cheese
