These pancakes taste very hearty and wholesome due to the addition of the pumpkin puree and gluten free oats. A perfect use for that leftover Halloween pumpkin.

Spiced Pumpkin and Oat Pancakes (Gluten Free, Dairy Free)
Place all the ingredients into a large bowl and mix until it forms a thick batter
Heat a little olive oil in a frying pan on a medium heat
Place about 2 tablespoons of mix into a thick disc shape
Cook for about 2 minutes on each side
Serve with maple syrup, a bit of dairy free spread and a sprinkle of cinnamon
