Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Chocolate Chip Peanut Bars.  

This week I’m reliving my childhood by starting to rewatch all seven series of Star Trek Next Generation.  It started on television when I was six years old and stopped when I was fourteen so I always associate it with my childhood.  What tv, music and films brings you back to your younger days?

Today’s recipe is perfect for meal prep.  I made this simple little bars at the weekend and used them with fresh fruit and a yoghurt for my week day breakfasts.  If I get time I’m hoping to my make some scones for breakfast this week.

Chocolate Chip Peanut Bars (Gluten & Dairy Free)

Difficulty: Beginner Prep Time 10 min Total Time 10 mins
Servings: 9
Best Season: Suitable throughout the year


A filling snack perfect for on the go gluten free snack



  1. Line an 8” by 8” cake tin with tinfoil

  2. Place the coconut oil and peanut butter in a saucepan

  3. Heat gently until melted and well combined

  4. Pour into a large bowl and stir in the chopped peanuts, oats, puffed rice and chocolate chips

  5. Press firmly into the cake tin

  6. Refrigerate for 2 hours

  7. Remove from the cake tin and decorate with a drizzle of dairy free chocolate and some extra chopped peanuts

  8. Cut into 9 bars
