Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Spiced Citrus Sultana Loaf.
Hope you all had a good week. I’m just having a get things done day – I’ve picked up some new decorations for Christmas for the house. I usually only have a Christmas tree but given my niece will be more into Christmas this year I thought I make more of an effort. Rest of the day will be spent getting caught up on the to do list of chores I never get round to. Unfortunately I still have my leg in a splint from my dislocated knee cap so things are taking a bit longer than usual.
I’m also hoping to get round to making some Brownie Gift jars this afternoon. If you fancy doing some weekend baking then maybe this recipe will interest you. This is a sticky loaf cake with lots of flavour from the spics and citrus zest – it is best served topped with dairy free spread (or butter if you can have dairy).

Spiced Citrus Sultana Loaf (Gluten & Dairy Free)
Ingredients
Instructions

Preheat the oven to 160 oC

Grease and line a 900g loaf tin

Place the honey, orange juice and milk in a saucepan and warm until melted and combined

In a large bowl whisk together the brown sugar and eggs
-
Pour in the honey mix
-
Stir in the lemon zest, orange zest, gluten free flour, ginger, cinnamon and sultanas
-
Bake for an hour

Allow to cool before slicing - I served mine dusted with a little icing sugar and some dairy free spread
