Hello everyone, welcome to my latest post for Gluten and Dairy Free Peanut Butter Cup Sundae.

I hope you are all having a good week so far.  I started back at work on Monday after 2.5 weeks off – for once I put my work phone and laptop into the study and didn’t touch it once.  I’m feeling refreshed but it was definitely a shock to the system when the alarm goes off at 6am.

I must apologise for this post if you are trying to cut back this January!  However if you are doing Veganuary good news is this recipe is vegan as well as gluten free.  I’ve made some mini gluten and dairy free peanut butter cups to top this decadent sundae of vanilla ice cream, peanut butter and chocolate sauce (all dairy free as well).

Ingredients

For the peanut butter cups:

For the peanut butter cups:

  1. Place 8 mini cupcake cases on a plate
  2. Put a small amount of the melted chocolate in the bottom of each paper case
  3. In the centre drop a little of the peanut butter

  4. Cover the top with a layer of chocolate
  5. Place in the freezer for 20 minutes or until set
  6. Remove the paper cases and cut in half

To assemble the sundae:

  1. Place a teaspoon of peanut butter in the base of two tumblers

  2. Place two scoops of dairy free ice cream on top of the peanut butter

  3. Scatter half of the peanut butter cups on top of the ice cream

  4. Pour on the dairy free chocolate sauce

  5. Top with the dairy free whipped cream and the rest of the peanut butter cups
